I drive 60 or so miles a day, and an LT1 with a cam/heads, high stall torque converter, etc wasn't really much of a commuter car. I don't want something boring to drive, but I need something that's not too much of a pain in the ass.
I'm actually looking at (don't ban me) used BMW M3s.

I'm actually looking at (don't ban me) used BMW M3s.
The auto w/ high stall is what killed the commuter part. I've got a 383 LT1 also with basically no stock parts left, if they came with they have been massaged. But with the 6 speed I get 28 mpg hwy. I've averaged 22 mpg on the last 2 PT's. Just don't get a BMW 2 wheeler as they are the gheyness ;).

Stock LT1s in F-bodys w/6 speed get great milage and have decent torque for get up and go. I got even better milage than Orange95Z on last year's Power Tour
I had a BMW and they are very expensive to maintain (by the dealer - basic tune up = $200 4 years ago). If you don't go to the dealer you better have a good mechanic who is also likely to be $$$
Prior to mods on my daily driver '05 GTO, the stock LS2 regularly delivered 24 mpg in mix driving with summer formula gas
